From the bark of the Chinchona (China Calisaya), a plant native of the Andes, it is quinine extracted. The name derives from the Countess of Chinchón, the wife of a viceroy of Peru, who, in 1638, was cured from malaria by the discovered properties of cinchona bark.
The infusion of the bark in alcohol and sugar gives rise to a tonic liqueur.
