The oldest underground cellar in the distillery is named “The Heroes’ Cellar” in honour of those employees who over the time contributed to let the distillery grow, giving their heart.
Today it shelters 4.000 barriques for the natural maturation of grape and wine brandies.
The barrel’s small size, from 225 to 500 liter, allows an intense exchange between the wood and the distillate, that gains a golden colour and develops smooth and complex flavours.
Every year, about 3% of the spirit evaporates; this part is commonly known as “the angels’ share”, but we prefer to define it “the Heroes’ share”.
